Ingredients
- 1 large onion
- 3 Tbsp butter
- 3 Large Potatoes
- 1 tsp salt
- ¼ tsp dry mustard
- ⅛ tsp pepper
- 3 cups water
- 2 cups milk
- 2 T parsley
Instructions
- Saute onion in butter. Stir in potatoes, salt, mustard, pepper and water. Heat to boiling; cover. Simmer 30 minutes or until potatoes are very soft; press through a fine sieve into a large bowl. Return to kettle; stir in milk. Heat slowly to boiling. Ladle into soup bowls, sprinkle with parsley.
