Potato Soup

Ingredients

  • 6 potatoes
  • ¾ cup butter
  • ¾ cup flour
  • 7 cups milk
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cups shredded cheddar cheese
  • 1 small bag bacon bits
  • 4 green onions, chopped
  • 1 8 oz sour cream

Instructions

  • Dice and Cook potatoes, set aside. In large pot melt butter, add flour and whisk. Add milk (medium heat), whisk until flour butter mixture is dissolved and until thick. Add potatoes, salt, pepper, 1 cup of cheese, bacon bits, and chopped green onions. Cook until heated, no boiling. Add sour cream and cook on low until thick. Add remaining cheese to individual servings.
